Ingredients
For the Salmon:
- 4 salmon fillets (6 oz each)
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp garlic powder
- 1 tsp paprika
For the Shrimp:
- 12 large shrimp, peeled and deveined
- 1 tbsp butter
- 1 tbsp olive oil
- 2 garlic cloves, minced
- Salt and pepper, to taste
- 1/4 tsp red pepper flakes (optional)
For the Fettuccine and Sauce:
- 12 oz fettuccine pasta
- 2 tbsp butter
- 2 garlic cloves, minced
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley (plus extra for garnish)
- Zest of 1 lemon
- Juice of 1/2 lemon
- Salt and pepper, to taste
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain.
- Grill the Salmon:
- Preheat a grill pan or outdoor grill to medium-high heat.
- Rub the salmon fillets with olive oil, garlic powder, paprika, salt, and pepper.
- Grill the salmon for 4–5 minutes per side, or until cooked to your desired doneness. Remove and set aside.
- Sauté the Shrimp:
- In a large skillet, heat butter and olive oil over medium heat.
- Add the minced garlic and cook until fragrant, about 30 seconds.
- Add the shrimp, season with salt, pepper, and red pepper flakes, and sauté until pink and opaque, about 2–3 minutes. Remove and set aside.
- Make the Creamy Sauce:
- In the same skillet, melt 2 tbsp butter and sauté the garlic until fragrant.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in the Parmesan cheese and let it melt, creating a smooth sauce.
- Add lemon zest, lemon juice, and parsley. Season with salt and pepper to taste.
- Combine the Pasta and Sauce:
- Toss the cooked fettuccine in the creamy sauce, adding reserved pasta water a little at a time if needed to loosen the sauce.
- Assemble the Dish:
- Plate the fettuccine on each plate.
- Top with a grilled salmon fillet and a few sautéed shrimp.
- Garnish with extra parsley and serve with lemon wedges on the side.
Tips:
- For a smoky flavor: Use smoked paprika for the salmon.
- Add veggies: Include sautéed spinach or roasted cherry tomatoes in the pasta for extra color and nutrition.
- Lighter option: Swap heavy cream for half-and-half or a mix of milk and cream cheese.
This dish will leave your guests (or you!) feeling like they dined at a fancy seafood restaurant. Bon appétit!
