Steamed Dumplings with a Savory Filling Recipe

Ingredients
For the Dough:
- 2 cups all-purpose flour
- 1/2 cup warm water
- Pinch of salt
For the Filling:
- 1/2 lb (225g) ground pork, chicken, or shrimp (or a mix)
- 1 cup finely chopped cabbage
- 2 green onions, finely chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp grated ginger
- 1 garlic clove, minced
- Salt and pepper, to taste
For the Dipping Sauce:
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- Optional: chili flakes or a dash of hot sauce
Instructions
- Prepare the Dough:
- In a mixing bowl, combine flour and salt. Gradually add warm water, mixing until a dough forms.
- Knead the dough on a floured surface for 8–10 minutes until smooth and elastic. Cover with a damp cloth and let rest for 30 minutes.
- Make the Filling:
- In a bowl, combine the ground meat, cabbage, green onions, soy sauce, sesame oil, ginger, garlic, salt, and pepper. Mix well until fully combined.
- Shape the Dumplings:
- Divide the dough into small, walnut-sized balls. Roll each ball into a thin circle, about 3 inches in diameter.
- Place 1–2 teaspoons of filling in the center of each wrapper.
- Fold the dumpling in half and pinch the edges to seal, pleating if desired.
- Steam the Dumplings:
- Line a bamboo steamer or regular steamer with parchment paper or cabbage leaves to prevent sticking.
- Arrange the dumplings in the steamer, leaving some space between each.
- Steam over boiling water for 12–15 minutes, or until the filling is fully cooked.
- Prepare the Dipping Sauce:
- In a small bowl, mix soy sauce, rice vinegar, sesame oil, and chili flakes. Adjust to taste.
- Serve:
- Serve the dumplings warm with the dipping sauce on the side.
