Ingredients
For the steak:
- 2 (10-12 oz) ribeye, sirloin, or strip steaks
- 2 tbsp olive oil

Instructions
- Preheat the Grill and Oven:
- Preheat your grill to medium-high heat (about 400-450°F / 200-230°C).
- Preheat your oven to 425°F (220°C).
- Prepare the Potatoes:
- Toss the quartered potatoes in olive oil, garlic powder, smoked paprika, rosemary, salt, and pepper.
- Spread them out on a baking sheet lined with parchment paper or foil, ensuring they’re in a single layer.
- Roast in the oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Prepare the Steaks:
- Rub the steaks with olive oil, then season both sides with garlic powder, smoked paprika, salt, and black pepper.
- Let them rest at room temperature for 15-20 minutes.
- Grill the Steaks:
- Place the steaks on the hot grill and cook for 4-5 minutes per side for medium-rare (adjust time based on your desired doneness). Use a meat thermometer to ensure accurate cooking:
- Rare: 125°F (52°C)
- Medium-rare: 135°F (57°C)
- Medium: 145°F (63°C)
- Well-done: 160°F (71°C)
- Remove from the grill and let the steaks rest for 5 minutes before slicing or serving.
- Assemble the Dish:
- Plate the grilled steak alongside the roasted potatoes.
- Garnish with fresh parsley and optional garlic butter on the steak for extra flavor.
