GROUND BEEF ENCHILADAS

Ingredients

For the enchilada filling:

  • 1 lb (450g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 cup (100g) shredded cheddar or Mexican blend cheese
  • 1/2 cup (120ml) enchilada sauce

For the enchilada assembly:

  • 8 flour or corn tortillas
  • 2 cups (240ml) enchilada sauce
  • 1 1/2 cups (150g) shredded cheese (cheddar, Monterey Jack, or a blend)

Optional toppings:

  • Sour cream
  • Chopped cilantro
  • Diced avocado
  • Sliced jalapeños
  • Squeeze of lime

Instructions

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C).
  2. Cook the Beef Filling:
  • Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up into crumbles.
  • Add the onion and garlic. Cook until softened, about 3-4 minutes.
  • Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for another minute.
  • Remove from heat and stir in 1/2 cup of enchilada sauce and 1 cup of shredded cheese. Mix until well combined.
  1. Prepare the Tortillas:
  • Lightly warm the tortillas in a microwave or skillet to make them pliable.
  1. Assemble the Enchiladas:
  • Spread about 1/4 cup of enchilada sauce at the bottom of a 9×13-inch (23×33 cm) baking dish.
  • Place a generous spoonful of the beef mixture into the center of each tortilla. Roll tightly and place seam-side down in the baking dish.
  • Repeat with all tortillas.
  1. Top with Sauce and Cheese:
  • Pour the remaining enchilada sauce evenly over the rolled tortillas.
  • Sprinkle the shredded cheese over the top.

  • Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  1. Garnish and Serve:
  • Let the enchiladas cool for 5 minutes. Top with sour cream, cilantro, avocado, jalapeños, or lime as desired.
