Ingredients
For the enchilada filling:
- 1 lb (450g) ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp chili powder

- 1 cup (100g) shredded cheddar or Mexican blend cheese
- 1/2 cup (120ml) enchilada sauce

- 8 flour or corn tortillas
- 2 cups (240ml) enchilada sauce
- 1 1/2 cups (150g) shredded cheese (cheddar, Monterey Jack, or a blend)

- Preheat Oven:
Preheat your oven to 375°F (190°C). - Cook the Beef Filling:
