  • 1 cup (240ml) heavy cream
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/2 tsp dried thyme (or Italian seasoning)
  • 1/4 tsp ground black pepper
  • 1/4 tsp red pepper flakes (optional, for heat)
  • Salt, to taste

For the pasta:

  • 12 oz (340g) fettuccine, spaghetti, or linguine
  • Salt, for pasta water

Garnish:

  • Chopped parsley or basil
  • Extra Parmesan cheese

Instructions

  1. Prepare the Pasta:
  • Cook the pasta in a large pot of salted boiling water according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
  1. Cook the Steak:
  • Pat the steak dry with paper towels and season both sides with salt and pepper.
  • Heat the olive oil or butter in a skillet over medium-high heat. Add the steak and sear for 3-4 minutes per side (for medium-rare) or until cooked to your desired doneness.
  • Remove the steak from the skillet and let it rest for 5 minutes. Slice thinly against the grain.
