Sliced Steak with Creamy Sauce Over Pasta
This recipe combines tender slices of steak with a rich, creamy sauce over a bed of pasta for a satisfying and indulgent meal.
Ingredients
For the steak:
- 1 lb (450g) sirloin or ribeye steak
- Salt and pepper, to taste
- 2 tbsp olive oil or butter
For the sauce:
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup (240ml) heavy cream
- 1/2 cup (50g) grated Parmesan cheese
- 1/2 tsp dried thyme (or Italian seasoning)
- 1/4 tsp ground black pepper
- 1/4 tsp red pepper flakes (optional, for heat)
- Salt, to taste
For the pasta:
- 12 oz (340g) fettuccine, spaghetti, or linguine
- Salt, for pasta water
Garnish:
- Chopped parsley or basil
- Extra Parmesan cheese
Instructions
- Prepare the Pasta:
- Cook the pasta in a large pot of salted boiling water according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
- Cook the Steak:
- Pat the steak dry with paper towels and season both sides with salt and pepper.
- Heat the olive oil or butter in a skillet over medium-high heat. Add the steak and sear for 3-4 minutes per side (for medium-rare) or until cooked to your desired doneness.
- Remove the steak from the skillet and let it rest for 5 minutes. Slice thinly against the grain.
- Make the Creamy Sauce:
- In the same skillet, reduce the heat to medium. Melt the butter, then add the minced garlic and cook for 1 minute until fragrant.
- Stir in the heavy cream and bring to a gentle simmer. Add the Parmesan cheese, dried thyme, black pepper, and red pepper flakes (if using). Cook, stirring frequently, until the cheese melts and the sauce thickens slightly (about 3-5 minutes).
- Taste and adjust seasoning with salt if needed.
- Combine Pasta and Sauce:
- Add the cooked pasta to the skillet with the sauce. Toss to coat evenly. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.
- Assemble the Dish:
- Plate the creamy pasta and top with slices of steak. Garnish with chopped parsley or basil and extra Parmesan cheese.
