Ingredients

  • 1 tablespoon olive oil
  • 14 oz (400g) kielbasa sausage, sliced into rounds
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 4 medium potatoes, peeled and diced (Yukon Gold or Russets work well)
  • 2 medium carrots, sliced
  • 4 cups (1 liter) chicken broth
  • 1 cup (240ml) heavy cream or half-and-half
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 1 cup shredded cheddar cheese (optional, for garnish)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

1. Cook the Kielbasa

  • Heat the olive oil in a large pot over medium heat.
  • Add the sliced kielbasa and cook until browned on both sides, about 5 minutes. Remove and set aside.

2. Sauté Aromatics

  • In the same pot, add the diced onion and sauté until softened, about 3-4 minutes.
  • Stir in the garlic and cook for an additional minute, until fragrant.

3. Cook the Vegetables

  • Add the diced potatoes and carrots to the pot. Stir to combine.
  • Pour in the chicken broth, scraping the bottom of the pot to release any browned bits.
  • Stir in the smoked paprika and thyme.

4. Simmer the Soup

  • Bring the soup to a boil, then reduce the heat to a simmer.

5. Add the Cream and Kielbasa

  • Use a potato masher to lightly mash some of the potatoes in the pot for a thicker consistency (optional).

6. Serve
