Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped

  • 1/2 cup beef broth
  • 1 can (10 oz) red enchilada sauce
  • 8 flour tortillas (6-inch size)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup black olives, sliced (optional)
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Sour cream (optional, for serving)

Instructions

  1. Cook the beef mixture:
    • In a large skillet, heat a little oil over medium heat.
    • Add the chopped onion and cook until soft, about 3-4 minutes.
    • Add the minced garlic and cook for 1 more minute.
    • Add the ground beef and cook, breaking it apart with a spatula, until browned. Drain excess fat.
    • Stir in the taco seasoning and beef broth, simmering for 5 minutes until the mixture is thickened and well combined. Remove from heat.
  2. Prepare the tortillas:
    • Preheat your oven to 375°F (190°C).
    • Lightly warm the tortillas in a dry skillet or microwave for a few seconds to make them pliable.
  3. Assemble the enchiladas:
    • Pour a little of the enchilada sauce into the bottom of a 9×13-inch baking dish and spread evenly.
    • Place a tortilla on a clean surface, add a spoonful of the beef mixture, and sprinkle with some shredded cheese. Roll the tortilla tightly and place seam-side down in the baking dish. Repeat for all tortillas.
    • Pour the remaining enchilada sauce over the rolled tortillas and top with the remaining shredded cheese. If desired, sprinkle sliced olives over the top.
  4. Bake:
    • Bake the enchiladas in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  5. Serve:
