Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb), cooked and shredded

  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 flour tortillas (8-inch size)
  • 2 tbsp butter, divided
  • Salsa, sour cream, and guacamole (optional, for serving)

Instructions

  1. Cook the chicken:
    • If not already cooked, season the chicken breasts with salt, pepper, cumin, chili powder, garlic powder, and paprika.
    • Heat 1 tbsp olive oil in a skillet over medium heat. Cook the chicken for 6-7 minutes per side, or until fully cooked (internal temperature of 165°F or 74°C).
    • Once cooked, shred the chicken using two forks and set aside.
  2. Sauté the vegetables:
    • In the same skillet, add a little more olive oil if needed.
    • Sauté the chopped onion and bell pepper over medium heat for 3-4 minutes, until softened. Set aside.
  3. Assemble the quesadillas:
    • Lay a tortilla flat on a clean surface.
    • Sprinkle 1/4 of the shredded chicken, 1/4 of the sautéed vegetables, and 1/4 of the cheese on half of the tortilla.
    • Fold the tortilla over to cover the filling.
  4. Cook the quesadillas:
    • Heat 1 tbsp of butter in a large skillet over medium heat.
    • Place the assembled quesadilla in the skillet and cook for 2-3 minutes per side, or until golden brown and the cheese is melted.
    • Repeat with the remaining tortillas.
  5. Serve:
    • Slice each quesadilla into wedges and serve with salsa, sour cream, or guacamole on the side.
