Garlic Parmesan Chicken Recipe

Serves: 4
Prep Time: 10 minutes
Cook Time: 20 minutes

Ingredients

  • 4 boneless, skinless chicken breasts (about 1 lb)
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional, for a bit of heat)
  • 1/4 cup olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (optional, for serving)

Instructions

  1. Prepare the chicken:
    • Preheat your oven to 400°F (200°C).
    • Season both sides of the chicken breasts with salt and pepper.
    • In one shallow dish, add the flour. In another, beat the eggs. In a third dish, combine the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, and red pepper flakes (if using).
  2. Coat the chicken:
    • Dredge each chicken breast in flour, coating both sides, then dip in the beaten eggs, and finally coat with the breadcrumb-Parmesan mixture. Press down gently to ensure the coating sticks.
  3. Cook the chicken:
    • Heat the olive oil and butter in a large skillet over medium heat.
    • Once the butter has melted and the oil is hot, add the coated chicken breasts. Cook for 4-5 minutes per side, until golden brown and crispy. The chicken should be cooked through (internal temperature should reach 165°F or 74°C).
    • If necessary, transfer the chicken to a baking sheet and bake in the preheated oven for 5-7 minutes to ensure it’s cooked through and crispy.
  4. Make the garlic butter:
    • In the same skillet, add the minced garlic and cook for 1 minute, until fragrant. Spoon the garlic butter over the chicken before serving.
  5. Serve:
    • Garnish the chicken with fresh parsley and serve with lemon wedges on the side.

Tips for Customization:

  • Add more cheese: For a cheesier flavor, sprinkle extra Parmesan over the chicken in the last few minutes of cooking.
  • Make it saucy: Serve the chicken with a drizzle of Alfredo sauce or marinara for an extra layer of flavor.
  • Vegetable sides: Pair the chicken with roasted vegetables, a fresh salad, or mashed potatoes for a complete meal.
  • Low-carb option: Use almond flour and skip the breadcrumbs for a keto-friendly version.
