Breakfast Tacos Recipe

Breakfast tacos are a fun, flavorful way to kickstart your day. They’re quick to prepare and easy to customize with your favorite fillings!

Ingredients

For the Tacos:

  • 6 small flour or corn tortillas
  • 6 large eggs
  • 1/4 cup milk (optional, for fluffier eggs)
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 1/2 cup cooked bacon, sausage, or chorizo (optional)
  • 1/2 cup diced vegetables (bell peppers, onions, tomatoes, etc.)
  • Salt and pepper, to taste
  • 1 tbsp butter or cooking oil

Optional Toppings:

  • Sliced avocado or guacamole
  • Salsa or pico de gallo
  • Fresh cilantro
  • Hot sauce
  • Sour cream

Instructions

  1. Prep the Tortillas:
Warm the tortillas in a dry skillet over medium heat for 30 seconds per side, or wrap them in foil and heat in a 350°F (175°C) oven for 5-10 minutes.
  2. Cook the Protein (Optional):
If using bacon, sausage, or chorizo, cook it in a skillet until done. Remove and set aside, leaving a bit of grease in the pan if desired.
  3. Sauté the Vegetables:
In the same skillet, add diced vegetables and sauté until soft, about 2-3 minutes. Remove and set aside.
  4. Scramble the Eggs:
In a medium bowl, whisk together eggs, milk, salt, and pepper. Melt butter or add a drizzle of oil to the skillet, then pour in the egg mixture. Cook over medium-low heat, stirring gently until the eggs are just set.
  5. Assemble the Tacos:
Place scrambled eggs in the center of each tortilla. Top with cheese, cooked protein, sautéed vegetables, and any additional toppings you like.
  6. Serve and Enjoy:
Serve immediately with your favorite sauces and garnishes.

Customization Ideas

  • Vegetarian: Skip the meat and load up on veggies and beans.
  • Spicy: Add jalapeños, chipotle sauce, or a sprinkle of chili powder.
  • Low-Carb: Use lettuce wraps or low-carb tortillas instead.
