Ingredients
For the Tacos:
- 6 small flour or corn tortillas
- 6 large eggs
- 1/4 cup milk (optional, for fluffier eggs)
- 1/2 cup shredded cheese (cheddar, Monterey Jack, or your choice)
- 1/2 cup cooked bacon, sausage, or chorizo (optional)
- 1/2 cup diced vegetables (bell peppers, onions, tomatoes, etc.)
- Salt and pepper, to taste
- 1 tbsp butter or cooking oil
Optional Toppings:
- Sliced avocado or guacamole
- Salsa or pico de gallo
- Fresh cilantro
- Hot sauce
- Sour cream
Instructions
- Prep the Tortillas:
Warm the tortillas in a dry skillet over medium heat for 30 seconds per side, or wrap them in foil and heat in a 350°F (175°C) oven for 5-10 minutes. - Cook the Protein (Optional):
If using bacon, sausage, or chorizo, cook it in a skillet until done. Remove and set aside, leaving a bit of grease in the pan if desired. - Sauté the Vegetables:
In the same skillet, add diced vegetables and sauté until soft, about 2-3 minutes. Remove and set aside. - Scramble the Eggs:
In a medium bowl, whisk together eggs, milk, salt, and pepper. Melt butter or add a drizzle of oil to the skillet, then pour in the egg mixture. Cook over medium-low heat, stirring gently until the eggs are just set. - Assemble the Tacos:
Place scrambled eggs in the center of each tortilla. Top with cheese, cooked protein, sautéed vegetables, and any additional toppings you like. - Serve and Enjoy:
