Crispy Hash and Eggs Breakfast Skillet

Ingredients
- 2 cups frozen hash browns (thawed or use fresh, shredded potatoes)

- 4 large eggs

Instructions
- Prepare the Potatoes:
If using frozen hash browns, make sure they are thawed and pat them dry to remove excess moisture. If using fresh potatoes, shred them and rinse under cold water to remove excess starch, then pat them dry. - Cook the Hash Browns:
Heat a large skillet over medium-high heat and add the olive oil or butter. Once hot, add the hash browns in an even layer and press down lightly with a spatula. Let them cook without stirring for about 4–5 minutes or until the bottom is golden brown and crispy. - Add Vegetables and Meat (Optional):
Add the chopped onion and bell pepper (if using) to the skillet and sauté for 3–5 minutes until softened. If using cooked bacon or sausage, add it now and stir to combine. - Season:
Sprinkle the hash mixture with salt, pepper, garlic powder, and smoked paprika. Stir everything to combine and ensure it’s evenly seasoned. - Make Room for Eggs:
Using the back of your spatula, make four small wells in the hash mixture. Crack an egg into each well. - Cook the Eggs:
