Skillet Potatoes

Skillet Potatoes Recipe

Crispy, golden skillet potatoes are a versatile and satisfying side dish for breakfast, lunch, or dinner. They’re easy to prepare and perfect with a variety of seasonings!

Ingredients

  • 2 lbs potatoes (Yukon Gold or red potatoes work best)
  • 2 tbsp olive oil or butter (or a mix)
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika (optional)
  • 1/4 cup diced onion (optional)
  • 1/4 cup diced bell peppers (optional)
  • Fresh herbs (like parsley or rosemary, optional)

Instructions

  1. Prep the Potatoes:
    • Wash and dice the potatoes into bite-sized cubes (about 1/2-inch pieces).
    • If time allows, soak the potatoes in cold water for 15–30 minutes to remove excess starch. This helps them crisp up better. Drain and pat dry thoroughly.
  2. Heat the Skillet:
Heat a large, heavy-bottomed skillet (preferably cast iron) over medium heat. Add the olive oil or butter and let it heat until shimmering.
  3. Cook the Potatoes:
Add the potatoes to the skillet in a single layer. Cook undisturbed for 5–7 minutes to allow the bottoms to brown.
  4. Season and Stir:
Sprinkle with salt, pepper, garlic powder, and paprika. Stir the potatoes gently, flipping them to brown on other sides.
  5. Add Onions and Peppers (Optional):
If using, add the onions and bell peppers to the skillet. Cook for an additional 10–15 minutes, stirring occasionally, until the potatoes are tender and golden brown on all sides.
  6. Garnish and Serve:
Sprinkle with fresh herbs if desired, and serve hot as a side dish or a hearty breakfast addition.

Tips for Perfect Skillet Potatoes

  • Don’t Overcrowd the Pan: Cook in batches if necessary to avoid steaming the potatoes instead of crisping them.
  • Use Medium Heat: Too high heat can burn the outside while leaving the inside undercooked.
  • Variations: Add shredded cheese, crispy bacon bits, or a dollop of sour cream for extra indulgence.
