Cook Time: 30-40 minutes
Servings: 4-6
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 stalk celery, finely chopped
- 1 medium carrot, finely chopped
- 1 teaspoon tomato paste
- 1 cup dry white wine (or seafood stock)
- 2 cups seafood stock (or chicken stock)
- 1 can (14.5 oz) diced tomatoes, drained
- 1 ½ cups heavy cream
- 1 teaspoon Old Bay seasoning (optional, for flavor)
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup cooked crab meat (preferably lump crab)
- 1 cup cooked shrimp, peeled and deveined
- 1 cup cooked lobster meat, chopped into chunks
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Sauté the Vegetables:
- In a large pot, heat olive oil and butter over medium heat.
- Add the chopped onion, garlic, celery, and carrot. Cook, stirring occasionally, for about 5-7 minutes, or until the vegetables are softened and the onion becomes translucent.
- Add Tomato Paste and Seasoning:
- Stir in the tomato paste and cook for 1-2 minutes to deepen its flavor.
- Add the Old Bay seasoning, smoked paprika, salt, and pepper to the vegetables. Stir to combine.
- Deglaze with Wine:
- Pour in the white wine (or seafood stock) and let it simmer for about 3-4 minutes, allowing the liquid to reduce slightly and the alcohol to evaporate.
- Add Stock and Tomatoes:
- Stir in the seafood stock and diced tomatoes, bring the mixture to a simmer, and cook for 10-15 minutes to allow the flavors to blend.
- Blend the Bisque:
- Use an immersion blender to carefully blend the soup until smooth and creamy. Alternatively, you can transfer the soup in batches to a countertop blender. Be sure to let it cool slightly before blending for safety.
- Add Cream and Seafood:
- After blending, return the bisque to low heat. Stir in the heavy cream and let the soup simmer for another 5-7 minutes, stirring occasionally.
- Gently fold in the crab, shrimp, and lobster meat, and let it warm through for 5 minutes. Taste and adjust seasoning if necessary.
- Serve:
- Ladle the bisque into bowls and garnish with freshly chopped parsley. Serve with lemon wedges for a burst of freshness.
Serving Suggestions:
- Serve with buttered toast or garlic bread for dipping.
- Pair with a light green salad or roasted vegetables to balance the richness of the bisque.
Tips:
- For extra flavor, roast the seafood (crab, shrimp, and lobster) in a hot oven for a few minutes before adding it to the bisque.
- If you prefer a thicker bisque, you can add a slurry of cornstarch and water (1 tablespoon cornstarch mixed with 2 tablespoons water) to the soup and cook until thickened.
- For a smoother texture, strain the bisque through a fine mesh sieve after blending.
