Cheese Pasta Recipe

Prep Time: 5 minutes

Cook Time: 15 minutes

Servings: 4

Ingredients

  • 12 oz (340g) pasta (e.g., fettuccine, penne, or spaghetti)
  • 2 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1 cup heavy cream (or whole milk for a lighter version)
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella or cheddar cheese
  • 1/4 tsp black pepper
  • 1/4 tsp salt (adjust to taste)
  • 1/4 tsp nutmeg (optional, for added depth)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cook the Pasta
    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. Prepare the Sauce
    • In a large skillet or saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
    • Stir in the heavy cream and bring it to a gentle simmer.
  3. Add the Cheese
    • Reduce the heat to low. Gradually whisk in the Parmesan and mozzarella cheese until melted and smooth.
  4. Season the Sauce
    • Stir in black pepper, salt, and nutmeg (if using). If the sauce is too thick, add a splash of the reserved pasta water to loosen it up.
  5. Combine with Pasta
    • Add the cooked pasta to the sauce. Toss until the pasta is evenly coated with the cheesy sauce.
  6. Serve
    • Plate the pasta and garnish with fresh parsley, extra Parmesan, or a sprinkle of red pepper flakes for a kick.

Variations

  • Add Protein: Mix in cooked chicken, shrimp, or crispy bacon.
  • Vegetarian Twist: Stir in steamed broccoli, peas, or sautéed mushrooms.
  • Spicy Kick: Add a pinch of chili flakes or a drizzle of hot sauce.
