Shrimp Scampi Recipe

Prep Time: 10 minutes

Cook Time: 10-12 minutes

Servings: 4

Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined (tails on or off, as preferred)
  • 8 oz (225g) linguine or spaghetti
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional, for heat)
  • 1/2 cup dry white wine (or chicken broth)
  • Juice of 1 lemon
  • Zest of 1 lemon (optional, for extra citrus flavor)
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Cook the Pasta
    • Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to the package instructions. Drain, reserving 1/2 cup of pasta water. Set aside.
  2. Cook the Shrimp
    • While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Make the Scampi Sauce
    • In the same skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until the garlic is fragrant but not browned.
    • Pour in the white wine and bring to a simmer, cooking for 2-3 minutes to reduce slightly. Stir in the lemon juice and lemon zest (if using). Season with salt and pepper to taste.
  4. Combine Shrimp and Pasta
    • Add the cooked pasta to the skillet, tossing to coat in the sauce. Add the shrimp back into the pan and toss everything together. If the sauce needs a little more liquid, add some reserved pasta water to reach the desired consistency.
  5. Serve
    • Garnish with fresh parsley and grated Parmesan cheese (if desired). Serve immediately with extra lemon wedges on the side.

Serving Suggestions

  • Serve the shrimp scampi with a side of garlic bread or a light salad.
  • Pair with a glass of dry white wine, such as Pinot Grigio or Sauvignon Blanc, to complement the flavors.

Tips and Variations

  • For Extra Creaminess: Add a splash of heavy cream or half-and-half to the sauce for a creamier texture.
  • Add Vegetables: Sauté some spinach, cherry tomatoes, or asparagus along with the garlic for extra flavor and color.
  • Make It Spicy: Increase the amount of red pepper flakes or drizzle with hot sauce for a spicier kick.
