Ingredients

For the Filling:

  • 1 pound (450g) ground beef
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • ½ cup water
  • 1 cup cooked rice (white, brown, or Mexican rice)
  • 1 cup canned black beans, rinsed and drained
  • 1 cup shredded cheddar cheese (or a Mexican blend)
  • ½ cup nacho cheese sauce (optional, for extra creaminess)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

For Assembly:

  • 6 large flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup sour cream
  • ½ cup guacamole (optional)

Instructions

  1. Cook the Ground Beef:
    • Heat olive oil in a skillet over medium heat. Add the diced onion and sauté until softened, about 2-3 minutes.
    • Add the garlic and cook for 30 seconds until fragrant.
    • Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
  2. Season the Beef:
    • Stir in the taco seasoning and ½ cup of water. Simmer for 3-5 minutes until the mixture thickens. Remove from heat.
  3. Prepare the Filling:
    • Mix the cooked rice, black beans, and half of the shredded cheese into the skillet with the seasoned beef. Stir to combine.
  4. Warm the Tortillas:
    • Heat each tortilla in a dry skillet over medium heat for about 20 seconds on each side, or microwave them wrapped in a damp paper towel for 30 seconds to make them pliable.
  5. Assemble the Burritos:
    • Spread a layer of nacho cheese sauce (if using) down the center of each tortilla.
    • Add a generous scoop of the beef and rice mixture.
    • Top with shredded lettuce, diced tomatoes, a sprinkle of cheese, and a dollop of sour cream and guacamole.
  6. Roll and Serve:
    • Fold in the sides of the tortilla, then roll it up tightly from the bottom.
    • Serve immediately, or toast the burritos in a hot skillet for 1-2 minutes on each side for a crispy finish.

Tips:

  • Customize the Filling: Add sautéed peppers, corn, or jalapeños for extra flavor and texture.
  • Meal Prep: Wrap the assembled burritos tightly in foil and freeze for up to 2 months. Reheat in the oven or microwave.
  • Make It Spicy: Drizzle hot sauce or add sliced pickled jalapeños for some heat.

Enjoy your cheesy, beefy burrito delight that’s perfect for a quick weeknight dinner or a satisfying lunch!
