Cheesy Chicken and Rice Casserole Recipe

Ingredients
- 2 cups cooked chicken, shredded or cubed (rotisserie chicken works great!)
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1 cup milk
- 1 can (10.5 oz) cream of chicken soup (or homemade equivalent)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables (peas, carrots, or broccoli)
- 2 cups shredded cheddar cheese (divided)
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika (optional)
- 1 tablespoon olive oil or butter
Instructions
- Preheat and Prep:
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Cook the Aromatics:
- Heat olive oil or butter in a skillet over medium heat. Add the diced onion and sauté until softened, about 2-3 minutes. Add the garlic and cook for 30 seconds until fragrant.
- Assemble the Casserole:
- In the prepared baking dish, combine the uncooked rice, chicken broth, milk, cream of chicken soup, sautéed onions and garlic, frozen vegetables, 1 cup of shredded cheese, salt, pepper, and smoked paprika (if using). Stir well to distribute ingredients evenly.
- Gently fold in the cooked chicken.
- Bake:
- Cover the dish tightly with aluminum foil and bake for 35-40 minutes, or until the rice is fully cooked and tender.
- Add the Cheese Topping:
- Remove the foil and sprinkle the remaining 1 cup of shredded cheese over the top. Return to the oven and bake uncovered for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Serve:
- Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley if desired.
