Ground Beef and Sweet Potatoes Skillet Recipe

Ingredients
- 1 pound (450g) ground beef (lean or regular)
- 2 medium sweet potatoes, peeled and diced into small cubes

- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin

- 1 cup baby spinach or kale, chopped (optional)
- Fresh parsley or cilantro, chopped (for garnish)
Instructions
- Cook the Sweet Potatoes:
- Heat 1 tablespoon of oil in a large skillet over medium heat.
- Add the diced sweet potatoes, season with a pinch of salt, and cook for 8-10 minutes, stirring occasionally, until tender and slightly golden.
- Remove the sweet potatoes from the skillet and set aside.
- Cook the Ground Beef:
- In the same skillet, add the remaining tablespoon of oil.

- Return the cooked sweet potatoes to the skillet and stir to combine with the beef.
