Ingredients

  • 1 pound (450g) ground beef (lean or regular)
  • 2 medium sweet potatoes, peeled and diced into small cubes
  • 2 tablespoons olive oil or avocado oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder (optional for a slight kick)
  • Salt and pepper, to taste
  • 1 cup baby spinach or kale, chopped (optional)
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Cook the Sweet Potatoes:
    • Heat 1 tablespoon of oil in a large skillet over medium heat.
    • Add the diced sweet potatoes, season with a pinch of salt, and cook for 8-10 minutes, stirring occasionally, until tender and slightly golden.
    • Remove the sweet potatoes from the skillet and set aside.
  2. Cook the Ground Beef:
    • In the same skillet, add the remaining tablespoon of oil.
    • Add the chopped onion and cook for 2-3 minutes until softened.
    • Stir in the garlic and cook for 30 seconds until fragrant.
    • Add the ground beef, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 5-7 minutes. Drain excess fat if needed.
  3. Season the Beef:
    • Stir in the smoked paprika, cumin, chili powder (if using), and salt and pepper. Mix well to coat the beef evenly with the spices.
  4. Combine and Finish:
    • Return the cooked sweet potatoes to the skillet and stir to combine with the beef.
    • If using spinach or kale, add it now and cook for 1-2 minutes until wilted.
  5. Garnish and Serve:
    • Sprinkle with fresh parsley or cilantro for a burst of freshness.
    • Serve warm as is, or pair with a side of rice, quinoa, or a green salad.
