Garbage Bread Recipe

Garbage Bread is a fun, customizable recipe that combines all your favorite ingredients in a stuffed bread roll. Perfect for game day, family dinners, or using up leftovers, this hearty bread can be filled with anything from meats and cheeses to vegetables and sauces. Here’s a classic version featuring a meaty, cheesy filling.

Ingredients

For the Dough:

  • 1 lb (450g) pizza dough (store-bought or homemade)

For the Filling:

  • 1 lb (450g) ground beef or sausage
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp Italian seasoning
  • ½ cup diced onions
  • ½ cup diced bell peppers (optional)
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • ½ cup marinara or pizza sauce

For the Topping:

  • 2 tbsp unsalted butter, melted
  • 1 tsp garlic powder
  • 1 tbsp grated Parmesan cheese
  • 1 tsp dried parsley or Italian seasoning

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Cook the Filling:
    • Heat a large skillet over medium heat. Add ground beef or sausage, breaking it up as it cooks.
    • Season with garlic powder, onion powder, and Italian seasoning. Add diced onions and bell peppers, and cook until softened. Drain any excess grease. Set aside to cool slightly.
  3. Roll Out the Dough:
    • On a floured surface, roll the pizza dough into a large rectangle (about 12×14 inches).
  4. Assemble the Bread:
    • Spread the marinara or pizza sauce evenly over the dough, leaving a 1-inch border around the edges.
    • Layer the cooked meat mixture on top, followed by mozzarella and cheddar cheese.
  5. Roll and Seal:
    • Starting at one long edge, carefully roll the dough into a tight log, pinching the seam to seal. Tuck in the ends and place the log seam-side down on the prepared baking sheet.
  6. Bake the Bread:
    • Brush the top of the dough with melted butter, then sprinkle with garlic powder, Parmesan cheese, and parsley.
    • Bake for 25-30 minutes, or until the bread is golden brown and cooked through.
  7. Slice and Serve:
    • Let the garbage bread cool for 5-10 minutes before slicing into thick pieces. Serve warm with extra marinara or ranch dressing for dipping.

Customizations:

  • Protein: Swap the ground beef for chicken, pepperoni, bacon, or leftover pulled pork.
  • Cheese: Experiment with different cheeses like provolone, pepper jack, or gouda.
  • Vegetables: Add mushrooms, spinach, olives, or jalapeños for more flavor.
  • Breakfast Version: Use scrambled eggs, sausage, and cheese for a morning twist.

This delicious, all-in-one bread is a crowd-pleaser that’s as fun to make as it is to eat!
