Sausage, Egg & Cheese Roll-Ups are an easy and delicious breakfast or snack option that combines savory sausage, scrambled eggs, and melty cheese wrapped in a soft tortilla. These roll-ups are quick to make and perfect for meal prep or a grab-and-go breakfast.

Ingredients

  • 1 lb breakfast sausage (mild or spicy)
  • 6 large eggs
  • 1/2 cup milk
  • Salt and pepper, to taste
  • 1 1/2 cups shredded cheddar cheese (or your favorite cheese)
  • 4 large flour tortillas
  • 1 tbsp olive oil or butter (for cooking eggs)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Cook the Sausage:
    • In a large skillet, heat the breakfast sausage over medium heat.
    • Break the sausage up with a spoon as it cooks, until browned and fully cooked, about 6-8 minutes.
    • Remove from the skillet and set aside. Drain any excess grease if necessary.
  2. Scramble the Eggs:
    • In a bowl, whisk the eggs with the milk, salt, and pepper.
    • In the same skillet, add 1 tablespoon of olive oil or butter.
    • Pour in the egg mixture and cook over medium-low heat, stirring gently until scrambled and fully cooked.
    • Remove the eggs from the skillet and set aside.
  3. Assemble the Roll-Ups:
    • Lay a tortilla flat on a clean surface.
    • In the center of the tortilla, layer a portion of the cooked sausage, scrambled eggs, and a generous amount of shredded cheese.
    • Carefully roll the tortilla up tightly, folding in the sides as you go to secure the filling.
  4. Warm the Roll-Ups (Optional):
    • Heat the roll-ups in the skillet over low heat, seam-side down, for 1-2 minutes on each side until the tortilla is golden and the cheese is melted.
    • You can also warm them in the oven at 350°F (175°C) for about 5-7 minutes if you’re making a batch.
  5. Serve:
    • Slice the roll-ups in half and serve warm. Optionally, garnish with fresh herbs or a drizzle of hot sauce for added flavor.

Tips:

  • Meal Prep: These roll-ups can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat them in the microwave or skillet when ready to eat.
  • Add Veggies: For added nutrition, you can include sautéed onions, bell peppers, or spinach in the roll-up mixture.
  • Make it Spicy: Add a few dashes of hot sauce or include spicy sausage for an extra kick.
  • Low-Carb Version: Use low-carb tortillas or lettuce wraps for a lighter, low-carb alternative.

These Sausage, Egg & Cheese Roll-Ups are perfect for a quick breakfast or an easy meal that’s satisfying and flavorful!
