Frosted Brown Sugar Pop Tarts Recipe

Ingredients
For the Dough:
- 2 ½ cups all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 1 cup (2 sticks) cold unsalted butter, cubed
- ¼ cup cold water (more if needed)
- 1 teaspoon vanilla extract
For the Filling:
- ½ cup brown sugar, packed
- 1 tablespoon ground cinnamon
- 2 tablespoons unsalted butter, softened
- 1 tablespoon flour
- Pinch of salt
For the Frosting:
- 1 cup powdered sugar
- 1-2 tablespoons milk
- ½ teaspoon vanilla extract
- Sprinkles (optional, for decoration)
Instructions
Step 1: Make the Dough
- In a large bowl, combine the flour, sugar, and salt. Add the cold butter and use a pastry cutter or your hands to work the butter into the flour until it resembles coarse crumbs.
- Add the cold water and vanilla extract, a little at a time, until the dough begins to come together. You may need a little more water, but don’t add too much.
- Divide the dough into two equal parts and form each into a disc. Wrap each disc in plastic wrap and refrigerate for at least 30 minutes (or up to 1 hour).
Step 2: Make the Filling
- In a small bowl, combine the brown sugar, cinnamon, butter, flour, and salt. Mix until it forms a smooth paste-like consistency. Set aside.
Step 3: Roll Out the Dough
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Remove one disc of dough from the fridge and roll it out on a lightly floured surface into a rectangle, about ⅛ inch thick. Use a sharp knife or a pizza cutter to cut the dough into 9 equal rectangles.
- Repeat with the second disc of dough, creating another set of 9 rectangles for the tops of the Pop Tarts.
