Frosted Brown Sugar Pop Tarts Recipe

Homemade Frosted Brown Sugar Pop Tarts are the perfect nostalgic treat! These sweet pastries have a golden, flaky crust with a warm, cinnamon-sugar filling and are topped with a sweet frosting and sprinkles—just like the classic version, but better!

Ingredients

For the Dough:

  • 2 ½ cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 cup (2 sticks) cold unsalted butter, cubed
  • ¼ cup cold water (more if needed)
  • 1 teaspoon vanilla extract

For the Filling:

  • ½ cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon flour
  • Pinch of salt

For the Frosting:

  • 1 cup powdered sugar
  • 1-2 tablespoons milk
  • ½ teaspoon vanilla extract
  • Sprinkles (optional, for decoration)

Instructions

Step 1: Make the Dough

  1. In a large bowl, combine the flour, sugar, and salt. Add the cold butter and use a pastry cutter or your hands to work the butter into the flour until it resembles coarse crumbs.
  2. Add the cold water and vanilla extract, a little at a time, until the dough begins to come together. You may need a little more water, but don’t add too much.
  3. Divide the dough into two equal parts and form each into a disc. Wrap each disc in plastic wrap and refrigerate for at least 30 minutes (or up to 1 hour).

Step 2: Make the Filling

  1. In a small bowl, combine the brown sugar, cinnamon, butter, flour, and salt. Mix until it forms a smooth paste-like consistency. Set aside.

Step 3: Roll Out the Dough

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Remove one disc of dough from the fridge and roll it out on a lightly floured surface into a rectangle, about ⅛ inch thick. Use a sharp knife or a pizza cutter to cut the dough into 9 equal rectangles.
  3. Repeat with the second disc of dough, creating another set of 9 rectangles for the tops of the Pop Tarts.

Step 4: Assemble the Pop Tarts

  1. Place a teaspoon of the brown sugar cinnamon filling in the center of each rectangle. Be careful not to overfill.
  2. Top with another rectangle of dough and gently press the edges together to seal. Use a fork to crimp the edges and create a decorative pattern.
  3. Use a small knife to make a few slits on top of each Pop Tart to allow steam to escape.

Step 5: Bake

  1. Place the assembled Pop Tarts on the prepared baking sheet and bake for 20-25 minutes, or until the pastries are golden brown and the filling is bubbly.
  2. Allow the Pop Tarts to cool completely before frosting.

Step 6: Frost the Pop Tarts

  1. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk if needed to reach your desired consistency.
  2. Spread a thin layer of frosting on top of each cooled Pop Tart and sprinkle with decorative sprinkles if desired.

Tips for Success

  • Dough Handling: If the dough gets too soft while rolling it out, place it back in the fridge for 10-15 minutes to firm up.
  • Freezer Option: These Pop Tarts freeze well! Once assembled, freeze them before baking for a later treat. Just bake directly from the freezer when you’re ready to enjoy.
  • Filling Variations: Try adding a touch of vanilla extract or nutmeg to the filling for extra flavor, or swap out the brown sugar for maple syrup for a unique twist.

These Frosted Brown Sugar Pop Tarts are flaky, sweet, and perfect for a homemade breakfast treat or snack!
