These Raspberry Oatmeal Breakfast Bars are a delightful combination of buttery oat crust, juicy raspberry filling, and crumbly topping. Perfect for a grab-and-go breakfast or a midday snack!
Ingredients
For the Crust and Topping:
- 1 ½ cups old-fashioned rolled oats
- 1 cup all-purpose flour (or almond flour for gluten-free)
- ½ cup brown sugar (lightly packed)
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter (melted)
- 1 teaspoon vanilla extract
For the Raspberry Filling:
- 1 ½ cups fresh or frozen raspberries
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch (or arrowroot powder)
- 1 teaspoon lemon juice
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
Step 2: Make the Crust and Topping
- In a large bowl, mix the oats, flour, brown sugar, baking soda, and salt.
- Add the melted butter and vanilla extract. Stir until the mixture resembles a coarse crumble.
- Reserve ¾ cup of the mixture for the topping, and press the remaining mixture firmly into the bottom of the prepared pan to form the crust.
Step 3: Prepare the Raspberry Filling
- In a medium bowl, combine the raspberries, sugar, cornstarch, and lemon juice. Mash slightly to release the juices but leave some raspberries whole.
Step 4: Assemble the Bars
- Spread the raspberry filling evenly over the crust.
- Sprinkle the reserved oat mixture over the raspberries to create a crumbly topping.
Step 5: Bake
- Bake for 30–35 minutes, or until the topping is golden brown and the filling is bubbly.
- Remove from the oven and let cool completely in the pan.
Step 6: Serve
- Use the parchment overhang to lift the bars from the pan. Cut into squares or rectangles.
- Serve as is or with a dollop of yogurt or whipped cream.
Storage
- Room Temperature: Store in an airtight container for up to 2 days.
- Refrigerator: Keep for up to 5 days.
- Freezer: Wrap tightly and freeze for up to 3 months. Thaw overnight before enjoying.
Tips and Variations
- Jam Substitute: Use raspberry jam instead of fresh raspberries for a quicker option.
- Berry Blend: Swap raspberries for blackberries, blueberries, or a mix of your favorite berries.
- Nutty Addition: Add chopped almonds or walnuts to the topping for extra crunch.
These bars are a perfect balance of sweet, tart, and hearty, making them a go-to for breakfast or snacking!
