Ingredients

For the Blackened Salmon:

  • 2 salmon fillets (skin-on or skinless, your choice)
  • 1 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (optional, for heat)
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and black pepper, to taste

For the Broccoli Alfredo:

  • 1 large head of broccoli, cut into florets
  • 1 lb fettuccine or pasta of choice
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

1. Prepare the Blackened Salmon:

  1. In a small bowl, combine the paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and black pepper.
  2. Rub the seasoning mixture evenly over both sides of the salmon fillets.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Once the oil is hot, add the salmon fillets and cook for 4-5 minutes per side, or until the salmon is crispy on the outside and cooked through (internal temperature should reach 145°F or 63°C).
  5. Remove the salmon from the skillet and set aside.

2. Cook the Broccoli and Pasta:

  1. Bring a large pot of salted water to a boil.
  2. Add the fettuccine (or your pasta of choice) and cook according to package instructions. In the last 3-4 minutes of cooking, add the broccoli florets to the boiling pasta water.
  3. Drain the pasta and broccoli, reserving about 1/2 cup of pasta water.

3. Make the Alfredo Sauce:

  1. In the same pot, melt the butter over medium heat.
  2. Add the minced garlic and cook for 1-2 minutes, until fragrant.
  3. Pour in the heavy cream and bring to a simmer. Stir occasionally and cook for 3-4 minutes, allowing the cream to thicken slightly.
  4. Stir in the grated Parmesan and shredded mozzarella cheese. Continue stirring until the cheese has melted and the sauce is smooth.
  5. Season with salt and pepper to taste. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

4. Assemble the Dish:

  1. Add the cooked fettuccine and broccoli to the Alfredo sauce, tossing gently to coat.
  2. Serve the pasta and broccoli mixture on plates, placing the blackened salmon fillet on top of each portion.

5. Garnish and Serve:

  1. Garnish with fresh parsley and additional grated Parmesan cheese if desired.
  2. Serve immediately with a side of garlic bread or a simple salad.

Serving Suggestions

  • Serve with a side of roasted vegetables or a crisp green salad to balance out the richness of the Alfredo sauce.
  • You can add extra spice by drizzling a bit of hot sauce or sprinkling red pepper flakes over the top.

Enjoy this flavorful, indulgent Blackened Salmon and Broccoli Alfredo!
