Ingredients
For the Blackened Salmon:
- 2 salmon fillets (skin-on or skinless, your choice)
- 1 tbsp olive oil
- 1 tbsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cayenne pepper (optional, for heat)
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- Salt and black pepper, to taste
For the Broccoli Alfredo:
- 1 large head of broccoli, cut into florets
- 1 lb fettuccine or pasta of choice
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Blackened Salmon:
- In a small bowl, combine the paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and black pepper.
- Rub the seasoning mixture evenly over both sides of the salmon fillets.
- Heat olive oil in a large skillet over medium-high heat.
- Once the oil is hot, add the salmon fillets and cook for 4-5 minutes per side, or until the salmon is crispy on the outside and cooked through (internal temperature should reach 145°F or 63°C).
- Remove the salmon from the skillet and set aside.
2. Cook the Broccoli and Pasta:
- Bring a large pot of salted water to a boil.
- Add the fettuccine (or your pasta of choice) and cook according to package instructions. In the last 3-4 minutes of cooking, add the broccoli florets to the boiling pasta water.
- Drain the pasta and broccoli, reserving about 1/2 cup of pasta water.
3. Make the Alfredo Sauce:
- In the same pot, melt the butter over medium heat.
- Add the minced garlic and cook for 1-2 minutes, until fragrant.
- Pour in the heavy cream and bring to a simmer. Stir occasionally and cook for 3-4 minutes, allowing the cream to thicken slightly.
- Stir in the grated Parmesan and shredded mozzarella cheese. Continue stirring until the cheese has melted and the sauce is smooth.
- Season with salt and pepper to taste. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
4. Assemble the Dish:
- Add the cooked fettuccine and broccoli to the Alfredo sauce, tossing gently to coat.
- Serve the pasta and broccoli mixture on plates, placing the blackened salmon fillet on top of each portion.
5. Garnish and Serve:
- Garnish with fresh parsley and additional grated Parmesan cheese if desired.
- Serve immediately with a side of garlic bread or a simple salad.
Serving Suggestions
- Serve with a side of roasted vegetables or a crisp green salad to balance out the richness of the Alfredo sauce.
- You can add extra spice by drizzling a bit of hot sauce or sprinkling red pepper flakes over the top.
Enjoy this flavorful, indulgent Blackened Salmon and Broccoli Alfredo!
