Steak Fajitas Recipe
Juicy, flavorful steak, colorful peppers, and onions wrapped in soft tortillas – this classic dish is perfect for taco night or a festive dinner.
Ingredients
For the Steak Marinade:
- 1 lb (450g) flank steak or skirt steak
- 1/4 cup olive oil
- 2 tbsp lime juice (freshly squeezed)
- 2 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp onion powder
- Salt and black pepper, to taste
For the Fajitas:
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 large onion, thinly sliced
- 1 tbsp olive oil
- 8 small flour or corn tortillas
Optional Toppings:
- Sour cream
- Guacamole
- Shredded cheese
- Salsa
- Lime wedges
- Fresh cilantro
Instructions
1. Marinate the Steak:
- In a bowl, combine olive oil, lime juice, soy sauce, Worcestershire sauce, garlic, cumin, chili powder, paprika, onion powder, salt, and black pepper.
- Place the steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 30 minutes to 1 hour (or up to overnight for maximum flavor).
2. Cook the Steak:
- Preheat a grill or skillet over medium-high heat.
- Remove the steak from the marinade and cook for 4-5 minutes per side for medium-rare, or longer if you prefer your steak more done.
- Let the steak rest for 5 minutes before slicing it thinly against the grain.
3. Cook the Vegetables:
- While the steak is resting, heat olive oil in a large skillet over medium heat.
- Add the sliced bell peppers and onion. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened and lightly charred.
4. Assemble the Fajitas:
- Warm the tortillas in a dry skillet or microwave.
- Slice the steak into thin strips and divide it among the tortillas.
- Top with the sautéed peppers and onions.
5. Serve:
- Serve the steak fajitas with optional toppings like sour cream, guacamole, salsa, shredded cheese, lime wedges, and fresh cilantro.
