One-Pan Chicken and Sweet Potato Skillet Recipe

This easy and flavorful one-pan dish combines tender chicken, roasted sweet potatoes, and vegetables, all cooked together in a single skillet. It’s a perfect healthy and nourishing meal with minimal cleanup!


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp ground cinnamon (optional, for extra warmth)
  • Salt and pepper, to taste
  • 1 red bell pepper, diced
  • 1 cup broccoli florets
  • 1 tbsp fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving

Instructions

  1. Preheat the Skillet:
    • Heat a large, oven-safe skillet over medium heat. Add 1 tbsp olive oil and let it heat up.
  2. Prepare the Chicken:
    • Season the chicken breasts with salt, pepper, garlic powder, paprika, and cumin.
    • Place the chicken in the skillet and sear for 3-4 minutes per side, until golden brown.
    • Remove the chicken from the skillet and set aside.
  3. Cook the Sweet Potatoes:
    • In the same skillet, add the diced sweet potatoes. Season with salt, pepper, and cinnamon (if using). Stir well to coat.
    • Cover the skillet and cook for about 10-12 minutes, stirring occasionally, until the sweet potatoes start to soften.
  4. Add the Vegetables:
    • Add the diced bell pepper and broccoli florets to the skillet with the sweet potatoes. Stir everything together.
    • Nestle the chicken breasts back into the skillet, on top of the veggies and sweet potatoes.
  5. Finish Cooking:
    • Cover the skillet with a lid and reduce the heat to low. Cook for an additional 10-15 minutes, until the chicken is cooked through and the sweet potatoes are tender.
    • If you’d like a crispy top on the chicken, place the skillet under a broiler for 2-3 minutes to finish.
  6. Serve:
    • Garnish with fresh parsley and serve with lemon wedges for a bright finish.

Tips

  • To add extra flavor, drizzle the chicken with a little balsamic glaze or sprinkle with feta cheese before serving.
  • You can swap out the broccoli for spinach, kale, or another favorite green veggie.
  • If you prefer, bake the dish in the oven at 400°F (200°C) for 25-30 minutes instead of cooking it on the stove.
