Ingredients
- For the Patties:
- 1 lb (450g) ground beef (80/20 blend for juicy burgers)
- Salt and freshly ground black pepper
- For the Bacon:
- 8 slices of thick-cut bacon, cooked to crispy perfection
- For Assembly:
- 4 brioche or potato buns, toasted
- 4 slices of cheddar or American cheese
- Sliced pickles
- Lettuce leaves
- Sliced tomatoes
- Sliced red onion (optional)
- Special Sauce (optional):
- ½ cup mayonnaise
- 1 tablespoon ketchup
- 1 teaspoon mustard
- 1 teaspoon pickle relish
- Dash of smoked paprika
Instructions
- Prepare the Bacon:
- Cook bacon in a skillet over medium heat until crispy. Drain on a paper towel-lined plate.
- Make the Special Sauce (if using):
- Mix mayonnaise, ketchup, mustard, relish, and smoked paprika in a small bowl. Set aside.
- Shape the Beef:
- Divide the ground beef into 4 equal portions (about 4 oz each). Roll into loose balls, but don’t pack them tightly.
- Cook the Smash Patties:
- Heat a large cast-iron skillet or griddle over medium-high heat until very hot.
- Place a beef ball on the skillet and smash it flat using a sturdy spatula or burger press. Use parchment paper between the spatula and beef if sticking occurs.
- Season with salt and pepper. Cook for 2–3 minutes until the edges are crispy.
- Flip the patty, place a slice of cheese on top, and cook for another 1–2 minutes until melted.
- Toast the Buns:
- Spread a little butter on the buns and toast them in the same skillet until golden.
- Assemble the Burgers:
- Spread special sauce (or condiments of your choice) on the bottom bun.
- Layer with lettuce, tomato, and pickles.
- Place the smash patty with melted cheese on top, followed by 2 slices of crispy bacon.
- Add optional onions and cover with the top bun.
- Serve:
- Serve immediately with fries, onion rings, or a side salad.
