Ingredients
- For the Taco Shells:
- 8 small flour or corn tortillas
- 1 cup shredded mozzarella cheese
- For the Filling:
- 1 cup pizza sauce
- 1 cup cooked ground beef, sausage, or diced chicken (optional)
- 1 cup shredded mozzarella cheese
- ½ cup sliced pepperoni, mini or regular
- ½ cup diced bell peppers
- ½ cup sliced black olives (optional)
- ½ teaspoon dried Italian seasoning
- For Topping:
- Grated Parmesan cheese
- Red pepper flakes
- Fresh basil or parsley leaves
Instructions
- Prepare the Taco Shells:
- Heat a non-stick skillet over medium heat.
- Sprinkle 2 tablespoons of shredded mozzarella cheese in a circle shape directly onto the skillet.
- Place a tortilla on top of the melting cheese and press gently.
- Cook for 1–2 minutes until the cheese is golden and crisp. Flip and cook the tortilla for another 1 minute. Set aside and repeat with remaining tortillas.
- Prepare the Filling:
- Heat the pizza sauce in a small saucepan or microwave.
- Combine the sauce with your choice of cooked meat, bell peppers, olives, and Italian seasoning. Warm through.
- Assemble the Tacos:
- Fill each cheesy tortilla shell with a scoop of the pizza filling.
- Sprinkle additional mozzarella cheese and top with pepperoni slices.
- Melt the Cheese:
- Arrange the filled tacos on a baking sheet and place them under the broiler for 1–2 minutes, or until the cheese on top is bubbly.
- Finish and Serve:
- Garnish with grated Parmesan, red pepper flakes, and fresh basil or parsley.
- Serve immediately with a side of marinara sauce for dipping, if desired.
