Crispy Sweet Heat Chicken

Serves: 4 | Prep Time: 10 minutes | Cook Time: 25 minutes

Ingredients

  • For the Chicken:
    • 4 boneless, skinless chicken thighs (or breasts for a leaner option)
    • Salt and black pepper to taste
    • 1 cup buttermilk (for marinating)
    • 1 cup all-purpose flour
    • 1 teaspoon paprika
    • ½ teaspoon garlic powder
    • ½ teaspoon onion powder
    • ½ teaspoon cayenne pepper (adjust for heat preference)
    • ½ teaspoon baking powder (for extra crispiness)
    • Vegetable oil for frying
  • For the Sweet Heat Sauce:
    • ¼ cup honey
    • 2 tablespoons sriracha sauce (or your favorite hot sauce)
    • 1 tablespoon soy sauce
    • 1 tablespoon rice vinegar (or white vinegar)
    • 1 teaspoon grated ginger (optional, for added depth)

Instructions

  1. Marinate the Chicken:
    • Season the chicken thighs with salt and pepper.
    • Place them in a bowl and pour the buttermilk over the chicken. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  2. Prepare the Flour Coating:
    • In a shallow bowl, whisk together the flour, paprika, garlic powder, onion powder, cayenne pepper, and baking powder.
  3. Fry the Chicken:
    • Heat about 1 inch of vegetable oil in a large skillet over medium-high heat.
    • Dredge each piece of marinated chicken in the seasoned flour mixture, pressing gently to ensure the coating sticks.
    • Fry the chicken in batches, cooking for 5–6 minutes per side, or until golden brown and crispy. Use a thermometer to check that the chicken has reached an internal temperature of 165°F (74°C).
  4. Make the Sweet Heat Sauce:
    • While the chicken is frying, whisk together honey, sriracha, soy sauce, rice vinegar, and ginger (if using) in a small bowl.
  5. Toss the Chicken:
    • Once the chicken is cooked and crispy, remove it from the skillet and drain on a paper towel-lined plate.
    • Drizzle or toss the fried chicken in the sweet heat sauce until well coated.
  6. Serve:
    • Serve the crispy sweet heat chicken hot with a side of rice, steamed veggies, or a fresh salad.

This dish combines crispy fried chicken with a tangy, sweet, and spicy sauce that packs a punch!
