Perfect Roast Beef

Serves: 6–8 | Prep Time: 15 minutes | Cook Time: 1 hour 30 minutes

Ingredients

  • For the Roast Beef:
    • 3–4 lb (1.4–1.8 kg) boneless beef ribeye roast, sirloin roast, or top round roast
    • 2 tablespoons olive oil
    • 4 cloves garlic, minced
    • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
    • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
    • 1 tablespoon Dijon mustard (optional for extra flavor)
    • Salt and freshly ground black pepper to taste
    • 1 teaspoon onion powder (optional)
    • 1 teaspoon paprika (optional)
  • For the Gravy (optional):
    • 1 cup beef broth
    • 1 tablespoon cornstarch (optional, for thickening)
    • 1 tablespoon butter

Instructions

  1. Prepare the Roast Beef:
    • Preheat your oven to 450°F (230°C).
    • Pat the beef roast dry with paper towels to ensure a good sear.
    • Rub the roast with olive oil, and then season generously with salt, pepper, garlic, rosemary, thyme, and any additional spices you like (such as onion powder and paprika).
    • If using, rub the Dijon mustard on top of the roast for an added layer of flavor.
  2. Roast the Beef:
    • Place the beef roast on a rack in a roasting pan.
    • Roast the beef in the preheated oven for 15 minutes to create a seared crust.
    • Reduce the oven temperature to 325°F (165°C) and continue roasting for about 1 to 1.5 hours, or until it reaches your desired internal temperature:
      • Rare: 120–125°F (49–52°C)
      • Medium-rare: 130–135°F (54–57°C)
      • Medium: 140–145°F (60–63°C)
      • Medium-well: 150–155°F (66–68°C)
      • Well-done: 160°F (71°C) and above
  3. Rest the Roast:
    • Once the roast reaches your desired doneness, remove it from the oven and let it rest, covered with foil, for 15–20 minutes. This allows the juices to redistribute and makes slicing easier.
  4. Make the Gravy (Optional):
    • While the roast is resting, you can make a quick gravy.
    • Pour the beef drippings from the roasting pan into a small saucepan.
    • Add beef broth and bring to a simmer.
    • If you want a thicker gravy, mix cornstarch with a little water and stir it into the pan, cooking until the gravy thickens.
    • Stir in 1 tablespoon of butter to finish the gravy and add richness.
  5. Serve:
    • Slice the roast beef against the grain into thin slices.
    • Serve with the homemade gravy and your favorite sides like mashed potatoes, roasted vegetables, or Yorkshire pudding.

This perfect roast beef recipe is tender, juicy, and full of flavor. The seasoning adds depth, and the homemade gravy is a delicious finishing touch.
