Quick Asian Beef Noodles

Ingredients

  • For the Beef:
    • 1 lb (450g) ground beef or thinly sliced beef strips
    • 2 tablespoons soy sauce
    • 1 tablespoon sesame oil
    • 1 teaspoon minced garlic
    • 1 teaspoon minced ginger
  • For the Noodles:
    • 8 oz (225g) Asian noodles (ramen, udon, or rice noodles)
    • 1 tablespoon sesame oil
  • For the Sauce:
    • 3 tablespoons soy sauce
    • 2 tablespoons oyster sauce
    • 1 tablespoon hoisin sauce
    • 1 teaspoon sugar or honey
    • 1 teaspoon chili garlic sauce (optional, for spice)
  • Vegetables:
    • 1 cup shredded carrots
    • 1 cup snap peas or broccoli florets
    • ½ cup sliced green onions
  • Toppings:
    • Sesame seeds
    • Fresh cilantro or green onions

Instructions

  1. Cook the Noodles:
    • Prepare the noodles according to package instructions. Drain, toss with 1 tablespoon sesame oil, and set aside.
  2. Cook the Beef:
    • Heat a large skillet or wok over medium-high heat.
    • Add the ground beef or beef strips and cook until browned, breaking up the meat if ground.
    • Stir in soy sauce, garlic, and ginger. Cook for another 2 minutes until fragrant. Remove beef from the skillet and set aside.
  3. Sauté Vegetables:
    • In the same skillet, add a little sesame oil if needed.
    • Toss in the carrots and snap peas (or broccoli). Sauté for 3–4 minutes until slightly tender but still crisp.
  4. Prepare the Sauce:
    • In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sugar, and chili garlic sauce (if using).
  5. Combine Everything:
    • Return the cooked beef to the skillet with the vegetables.
    • Add the noodles and pour the sauce over everything.
    • Toss to coat and cook for another 2–3 minutes until heated through.
  6. Serve:
    • Garnish with sesame seeds, green onions, or fresh cilantro.
    • Serve hot, with lime wedges if desired.
