Ingredients

For the Nachos:

  • 1 bag (12-16 oz) tortilla chips
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
  • 1 lb ground beef, chicken, or turkey
  • 1 packet taco seasoning (or make your own with chili powder, cumin, paprika, garlic powder, and salt)
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn (fresh, canned, or frozen and thawed)

For the Toppings:

  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, finely diced
  • 1 avocado, diced or mashed into guacamole
  • 1/4 cup pickled jalapeños
  • 1/4 cup sliced black olives
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup sour cream or Greek yogurt
  • Salsa or pico de gallo
  • Lime wedges (optional)

Instructions

  1. Prepare the Meat
    • In a skillet over medium heat, cook the ground beef until browned and cooked through.
    • Drain any excess fat, then stir in the taco seasoning and 1/4 cup water. Simmer for 2-3 minutes until the meat is coated in the seasoning.
  2. Preheat and Layer
    • Preheat your oven to 375°F (190°C).
    • On a large, oven-safe platter or baking sheet, spread a layer of tortilla chips. Sprinkle with half of the shredded cheese, followed by half of the seasoned meat, beans, and corn.
    • Add another layer of chips and repeat with the remaining cheese, meat, beans, and corn.
  3. Bake the Nachos
    • Bake in the preheated oven for 10-12 minutes, or until the cheese is fully melted and bubbling.
  4. Add Toppings
    • Remove the nachos from the oven and immediately add fresh toppings: diced tomatoes, red onion, avocado, jalapeños, olives, and cilantro.
    • Drizzle with sour cream and salsa, or serve them on the side.
  5. Serve
    • Serve the nachos warm, garnished with lime wedges for an extra zesty kick.

Tips

  • For added spice, sprinkle some cayenne pepper or use a hot salsa.
  • Make it vegetarian by skipping the meat and doubling the beans or adding sautéed veggies.
  • For extra crisp nachos, use thicker tortilla chips.

Dig into these mouthwatering nachos and enjoy every loaded bite!
