Ingredients

For the Shrimp:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp garlic powder
  • 1/4 tsp ground black pepper

For the Lo Mein:

  • 8 oz lo mein noodles or egg noodles (you can also use spaghetti if needed)
  • 2 tbsp vegetable oil (or sesame oil for extra flavor)
  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 small carrot, julienned
  • 2 cloves garlic, minced
  • 2 cups broccoli florets
  • 2-3 green onions, chopped

For the Sauce:

  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce (optional, for sweetness)
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1/2 tsp ground ginger or 1 tsp freshly grated ginger
  • 1/4 tsp crushed red pepper flakes (optional, for heat)

Instructions

  1. Prepare the Shrimp
    • In a bowl, toss the shrimp with soy sauce, sesame oil, garlic powder, and black pepper. Set aside to marinate for about 10-15 minutes.
  2. Cook the Noodles
    • Bring a large pot of salted water to a boil and cook the lo mein noodles according to the package instructions. Drain and set aside, reserving a little pasta water.
  3. Make the Sauce
    • In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce (if using), rice vinegar, brown sugar, sesame oil, ginger, and crushed red pepper flakes. Set aside.
  4. Stir-Fry the Shrimp and Vegetables
    • Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp from the skillet and set aside.
    • In the same skillet, add a little more oil if necessary and sauté the onion, bell pepper, carrot, and broccoli for 4-5 minutes until the vegetables are tender-crisp. Add the minced garlic and cook for 30 seconds more.
  5. Combine Everything
    • Add the cooked noodles to the skillet with the vegetables. Pour the sauce over the noodles and toss everything together to coat. Add the cooked shrimp back into the skillet and mix until everything is combined and heated through.
  6. Serve
    • Garnish with chopped green onions and serve immediately.

Tips

  • Add cooked chicken, beef, or tofu for a protein variation.
  • For extra crunch, sprinkle toasted sesame seeds on top.
  • If you want a spicier dish, add more red pepper flakes or a drizzle of sriracha sauce.

Enjoy this delicious, flavorful shrimp lo mein!
