Ingredients

For the Pasta:

  • 12 oz (350g) pasta (spaghetti, penne, or fusilli)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 2 cups cherry tomatoes, halved
  • 4 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Optional Add-Ins:

  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup toasted pine nuts or walnuts
  • 1/4 cup heavy cream or 2 tbsp cream cheese for a creamier version

Instructions

  1. Cook the Pasta
    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. Sauté the Garlic and Tomatoes
    • Heat olive oil in a large skillet over medium heat.
    • Add minced garlic and red pepper flakes, cooking until fragrant (about 30 seconds).
    • Add cherry tomatoes, season with a pinch of salt, and cook until softened (about 5 minutes).
  3. Add Spinach and Combine
    • Stir in the chopped spinach, cooking until wilted (2-3 minutes).
  4. Toss with Pasta
    • Add the cooked pasta to the skillet, tossing to combine. Use reserved pasta water a few tablespoons at a time to create a light sauce.
  5. Finish and Serve
    • Stir in Parmesan cheese and optional basil or nuts if using.
    • Season with additional salt and pepper to taste.
    • Serve immediately with extra Parmesan and a drizzle of olive oil if desired.

Tips

  • Add cooked chicken, shrimp, or sausage for extra protein.
  • For a richer flavor, deglaze the skillet with a splash of white wine before adding spinach.
