Ingredients:

  • 2 cups cooked brown rice (preferably cold, for best texture)
  • 2 tbsp vegetable oil (or sesame oil for extra flavor)
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1/2 cup frozen peas (or mixed vegetables)
  • 2 eggs, lightly beaten
  • 2-3 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil (optional, for extra flavor)
  • 2 green onions, chopped (for garnish)
  • Salt and pepper, to taste

Instructions:

1. Prepare the Rice:

  • If you’re using freshly cooked brown rice, spread it out on a baking sheet and let it cool for a few minutes. Cold rice works best for fried rice because it’s less sticky and fries up nicely.

2. Sauté the Aromatics:

  • Heat 1 tablespoon of vegetable oil (or sesame oil) in a large skillet or wok over medium-high heat.
  • Add the diced onion and sauté for 2-3 minutes until softened.
  • Add the minced garlic and cook for another 30 seconds, until fragrant.

3. Cook the Vegetables:

  • Add the frozen peas (or any other vegetables you’re using) to the skillet and sauté for another 2-3 minutes until heated through.

4. Scramble the Eggs:

  • Push the vegetables to one side of the skillet.

5. Fry the Rice:

  • Add the cold brown rice to the skillet, breaking up any clumps with a spatula.
  • Stir everything together, ensuring the rice is evenly mixed with the vegetables and eggs.

6. Season the Rice:

  • Add the soy sauce, oyster sauce (if using), and sesame oil (if using) to the rice. Stir well to combine and coat the rice with the sauces.
  • Cook for 3-4 minutes, stirring occasionally, until the rice is heated through and slightly crispy at the edges.

7. Serve:

  • Garnish with chopped green onions and season with salt and pepper to taste.
