Beef and Rotini in Garlic Parmesan Sauce

Ingredients

For the beef and pasta:

  • 1 lb (450g) ground beef or steak strips
  • 12 oz (340g) rotini pasta
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste

For the sauce:

  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 2 cups whole milk (or half-and-half for extra creaminess)
  • 1 cup grated Parmesan cheese
  • 1/4 tsp nutmeg (optional)
  • Salt and black pepper, to taste

  • Fresh parsley, chopped
  • Extra Parmesan cheese

Instructions

  1. Cook the pasta:
    • Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the beef:
    • In a large skillet, heat the olive oil over medium heat. Add the ground beef or steak strips and season with garlic powder, salt, and pepper.
    • Cook until browned and fully cooked (about 5–7 minutes). Remove the beef from the skillet and set aside.
  3. Make the sauce:
    • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant.
    • Sprinkle the flour into the skillet and whisk to create a roux. Cook for 1 minute.
    • Gradually add the milk, whisking constantly to prevent lumps. Bring to a simmer and cook for 3–4 minutes until slightly thickened.
    • Stir in the Parmesan cheese and nutmeg (if using). Season with salt and pepper to taste.
  4. Combine:
    • Add the cooked pasta and beef back into the skillet with the sauce. Toss to coat everything evenly. Cook for an additional 2–3 minutes to warm through.
  5. Serve:
    • Transfer to serving plates and garnish with fresh parsley and extra Parmesan cheese if desired.
