Beef Enchiladas
Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade seasoning)

- 10 small flour or corn tortillas
- 2 cups red enchilada sauce (store-bought or homemade)

Instructions
- Prepare the Beef Filling:
- In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon. Drain any excess fat.
- Add the diced onion and minced garlic, and cook for another 3-4 minutes until the onion is softened.
- Stir in the taco seasoning and water (if using a packet) and simmer for 2-3 minutes until the mixture thickens. Set aside.
- Prepare the Enchiladas:
