Beef & Parmesan Tortellini

Ingredients

For the main dish:

  • 1 lb (450g) ground beef or steak strips
  • 10–12 oz (280–340g) cheese tortellini (fresh or frozen)
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste

For the Parmesan sauce:

  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 1 1/2 cups whole milk (or heavy cream for a richer sauce)
  • 3/4 cup grated Parmesan cheese
  • 1/4 tsp Italian seasoning
  • Pinch of nutmeg (optional)
  • Salt and black pepper, to taste

Optional garnishes:

  • Fresh parsley, chopped
  • Extra Parmesan cheese

Instructions

  1. Cook the tortellini:
    • Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions. Drain and set aside.
  2. Cook the beef:
    • In a large skillet, heat olive oil over medium heat. Add the ground beef or steak strips and season with garlic powder, salt, and pepper.
    • Cook until browned and fully cooked (about 5–7 minutes). Remove the beef from the skillet and set aside.
  3. Make the Parmesan sauce:
    • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant.
    • Sprinkle the flour into the skillet and whisk to form a roux. Cook for 1 minute.
    • Gradually pour in the milk, whisking constantly to prevent lumps. Bring the mixture to a gentle simmer and cook for 3–4 minutes until slightly thickened.
    • Stir in the Parmesan cheese, Italian seasoning, and nutmeg (if using). Season with salt and pepper to taste.
  4. Combine the dish:
    • Add the cooked beef and tortellini to the skillet with the Parmesan sauce. Toss gently to coat everything evenly. Let it cook for another 2–3 minutes to warm through.
  5. Serve:
    • Transfer to serving plates and garnish with chopped parsley and extra Parmesan cheese if desired.
