Cheesy Beefy Burrito Delight

Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 1 packet taco seasoning (or homemade seasoning)
  • ½ cup water (if using taco seasoning)
  • 1 can (10 oz) diced tomatoes with green chilies (optional for added flavor)
  • 1 can (4 oz) diced green chilies (optional for extra heat)
  • 1 cup cooked rice (optional, for added filling)
  • 1 cup shredded cheddar cheese (or a cheese blend)
  • 8 large flour tortillas
  • 1 cup sour cream
  • 1 cup shredded lettuce (optional for topping)
  • Salsa (for serving)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Cook the Ground Beef:
    • In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon. Drain any excess fat.
    • Add the diced onion to the beef and cook for another 3-4 minutes, until softened and fragrant.
    • Stir in the taco seasoning and water (or use homemade seasoning), and cook for 2-3 more minutes, allowing the mixture to thicken.
    • Optional: Stir in the diced tomatoes with green chilies and diced green chilies for extra flavor and heat. Add the cooked rice at this stage if you’re using it.
  2. Assemble the Burritos:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or a little oil.
    • Lay the tortillas flat on a clean surface. Spoon about ¼ cup of the beef mixture into the center of each tortilla, then sprinkle with shredded cheese.
    • Roll up each tortilla tightly, folding in the sides as you go to form a burrito.
  3. Bake the Burritos:
    • Place the burritos seam-side down in the prepared baking dish.
    • Sprinkle the remaining shredded cheese over the top of the burritos.
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  4. Serve:
    • Serve the burritos with a dollop of sour cream, a sprinkle of shredded lettuce, salsa, and fresh cilantro for garnish.

Tips

  • Add Veggies: You can add sautéed bell peppers, corn, or zucchini to the beef mixture for added flavor and texture.
  • Spice It Up: Add some diced jalapeños or hot sauce to the beef mixture for extra heat.
  • Make Ahead: You can assemble the burritos ahead of time, cover them with foil, and refrigerate them for up to 24 hours. Bake as directed when ready to serve.
