Cheesy Beefy Burrito Delight
Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 1 packet taco seasoning (or homemade seasoning)
- ½ cup water (if using taco seasoning)
- 1 can (10 oz) diced tomatoes with green chilies (optional for added flavor)
- 1 can (4 oz) diced green chilies (optional for extra heat)
- 1 cup cooked rice (optional, for added filling)
- 1 cup shredded cheddar cheese (or a cheese blend)
- 8 large flour tortillas
- 1 cup sour cream
- 1 cup shredded lettuce (optional for topping)
- Salsa (for serving)
- Fresh cilantro, chopped (for garnish)
Instructions
- Cook the Ground Beef:
- In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon. Drain any excess fat.
- Add the diced onion to the beef and cook for another 3-4 minutes, until softened and fragrant.
- Stir in the taco seasoning and water (or use homemade seasoning), and cook for 2-3 more minutes, allowing the mixture to thicken.
- Optional: Stir in the diced tomatoes with green chilies and diced green chilies for extra flavor and heat. Add the cooked rice at this stage if you’re using it.
- Assemble the Burritos:
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or a little oil.
- Lay the tortillas flat on a clean surface. Spoon about ¼ cup of the beef mixture into the center of each tortilla, then sprinkle with shredded cheese.
- Roll up each tortilla tightly, folding in the sides as you go to form a burrito.
- Bake the Burritos:
- Place the burritos seam-side down in the prepared baking dish.
- Sprinkle the remaining shredded cheese over the top of the burritos.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve:
- Serve the burritos with a dollop of sour cream, a sprinkle of shredded lettuce, salsa, and fresh cilantro for garnish.
Tips
- Add Veggies: You can add sautéed bell peppers, corn, or zucchini to the beef mixture for added flavor and texture.
- Spice It Up: Add some diced jalapeños or hot sauce to the beef mixture for extra heat.
- Make Ahead: You can assemble the burritos ahead of time, cover them with foil, and refrigerate them for up to 24 hours. Bake as directed when ready to serve.
