Creamy Beef and Rotini in Garlic Parmesan Sauce

This rich and flavorful dish combines tender ground beef, rotini pasta, and a creamy garlic Parmesan sauce. It’s a quick and satisfying comfort meal perfect for busy weeknights.

Ingredients

For the pasta and beef:

  • 12 oz (340g) rotini pasta
  • 1 lb (450g) ground beef or thinly sliced steak
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste

For the garlic Parmesan sauce:

  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 2 cups whole milk (or half-and-half for a richer sauce)
  • 1 cup grated Parmesan cheese
  • 1/4 tsp Italian seasoning
  • Pinch of red pepper flakes (optional)
  • Salt and black pepper, to taste

Optional garnish:

  • Fresh parsley, chopped
  • Extra Parmesan cheese

Instructions

  1. Cook the pasta:
  • Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
  1. Cook the beef:
  • Heat olive oil in a large skillet over medium heat. Add the ground beef or steak strips. Season with garlic powder, onion powder, salt, and pepper.
  • Cook until the beef is browned and fully cooked (about 5–7 minutes). Remove from the skillet and set aside.
  1. Make the garlic Parmesan sauce:
  • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant.
  • Sprinkle in the flour and whisk to create a roux. Cook for 1 minute.
  • Gradually pour in the milk, whisking constantly to prevent lumps. Bring the mixture to a gentle simmer and cook for 3–4 minutes until thickened.
  • Stir in the Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Season with salt and pepper to taste.
  1. Combine:
  • Add the cooked rotini and beef to the skillet with the sauce. Toss until everything is evenly coated. Cook for an additional 2–3 minutes to warm through.
  1. Serve:
  • Transfer to serving plates and garnish with fresh parsley and extra Parmesan cheese if desired.

Serving Suggestions

  • Serve with garlic bread or a side salad for a complete meal.
