Crockpot Chicken and Dumplings

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 medium onion, diced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup (or homemade version)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 cup frozen peas
  • 1 cup heavy cream or half-and-half
  • For the Dumplings:
    • 1 ½ cups all-purpose flour
    • 2 teaspoons baking powder
    • ½ teaspoon salt
    • ¾ cup milk
    • 2 tablespoons unsalted butter, melted
    • 1 teaspoon dried parsley (optional)

Instructions

  1. Prepare the Chicken and Vegetables:
    • Place the chicken breasts (or thighs) in the bottom of the Crockpot.
    • Add the diced onion, carrots, celery, garlic, chicken broth, cream of chicken soup, thyme, parsley, garlic powder, salt, and pepper. Stir to combine.
  2. Cook:
    • Cover and cook on Low for 6-7 hours or High for 3-4 hours, until the chicken is fully cooked and tender.
  3. Shred the Chicken:
    • After cooking, remove the chicken from the Crockpot and shred it using two forks. Return the shredded chicken to the Crockpot and stir in the frozen peas and heavy cream.
  4. Make the Dumplings:
    • In a medium bowl, whisk together the flour, baking powder, salt, and parsley (if using).
    • Add the milk and melted butter, and stir until just combined. The dough will be thick.
  5. Add the Dumplings:
    • Drop spoonfuls of the dumpling dough on top of the chicken mixture in the Crockpot. Make sure to space them evenly.
    • Cover the Crockpot and cook on High for 1 hour, or until the dumplings are cooked through and a toothpick inserted into the center comes out clean.
  6. Serve:
    • Spoon the chicken, vegetables, and dumplings into bowls, and enjoy!

Tips

  • Chicken Options: You can also use bone-in chicken pieces for more flavor. Just remove the bones before shredding the meat.
  • For Lighter Dumplings: Replace the heavy cream with milk or use a lighter version of cream of chicken soup.
  • Add More Veggies: Add potatoes, parsnips, or corn for more variety and flavor.
  • Storage: Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.
