- 2 tbsp vegetable oil, divided
- 1 bell pepper (any color), sliced
- 1 medium carrot, julienned or thinly sliced
- 1 cup broccoli florets
- 2 garlic cloves, minced
- 1 tsp grated ginger
- 2 tbsp low-sodium soy sauce (for sauce)
- 1 tbsp hoisin sauce or teriyaki sauce
- 1/2 tsp sesame oil
- 1/4 cup (60 ml) water or chicken stock
For the Yellow Rice:
- 1 cup (200 g) long-grain rice (like basmati or jasmine)
- 2 cups (500 ml) chicken or vegetable stock
- 1/2 tsp ground turmeric
- 1/4 tsp ground cumin
- 1 tbsp butter or olive oil
- Salt to taste
Garnish:
- Green onions, chopped
- Sesame seeds
Instructions
Step 1: Prepare the Yellow Rice
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, heat butter or olive oil over medium heat. Add turmeric and cumin, stirring until fragrant.
- Add the rice and toast for 1-2 minutes.
- Pour in the chicken or vegetable stock and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked and the liquid is absorbed. Fluff with a fork and set aside.
Step 2: Marinate and Cook the Beef
- In a bowl, mix soy sauce, oyster sauce, and cornstarch. Add the sliced beef and toss to coat. Let marinate for 10 minutes.
- Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Stir-fry the beef for 2-3 minutes until browned and cooked through. Remove and set aside.
Step 3: Cook the Shrimp
- In the same skillet, add another 1 tbsp of oil. Cook the shrimp for 2-3 minutes, flipping halfway through, until pink and opaque. Remove and set aside with the beef.
Step 4: Stir-Fry the Vegetables
- Add garlic and ginger to the skillet, cooking for 30 seconds until fragrant.
- Add broccoli, carrots, and bell peppers. Stir-fry for 3-4 minutes, or until tender-crisp.
Step 5: Combine Everything
- In a small bowl, mix soy sauce, hoisin or teriyaki sauce, sesame oil, and water or stock. Pour over the vegetables.
- Return the beef and shrimp to the skillet, tossing to coat everything in the sauce. Cook for 1-2 minutes to heat through.
Step 6: Serve
- Plate the yellow rice and top with the shrimp and beef stir fry.
- Garnish with green onions and sesame seeds. Serve immediately.
Tips:
- For extra spice, add a pinch of red pepper flakes or drizzle with sriracha.
- Substitute vegetables like snap peas, zucchini, or mushrooms based on preference.
- Marinate the beef longer for more intense flavor.
