Ingredients
For the Filling:
- 1 pound (450g) ground beef
- 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
- ½ cup water
- 1 cup cooked rice (white, brown, or Mexican rice)
- 1 cup canned black beans, rinsed and drained
- 1 cup shredded cheddar cheese (or a Mexican blend)
- ½ cup nacho cheese sauce (optional, for extra creaminess)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
For Assembly:
- 6 large flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- ½ cup sour cream
- ½ cup guacamole (optional)
Instructions
- Cook the Ground Beef:
- Heat olive oil in a skillet over medium heat. Add the diced onion and sauté until softened, about 2-3 minutes.
- Add the garlic and cook for 30 seconds until fragrant.
- Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
- Season the Beef:
- Stir in the taco seasoning and ½ cup of water. Simmer for 3-5 minutes until the mixture thickens. Remove from heat.
- Prepare the Filling:
- Mix the cooked rice, black beans, and half of the shredded cheese into the skillet with the seasoned beef. Stir to combine.
- Warm the Tortillas:
- Heat each tortilla in a dry skillet over medium heat for about 20 seconds on each side, or microwave them wrapped in a damp paper towel for 30 seconds to make them pliable.
- Assemble the Burritos:
- Spread a layer of nacho cheese sauce (if using) down the center of each tortilla.
- Add a generous scoop of the beef and rice mixture.
- Top with shredded lettuce, diced tomatoes, a sprinkle of cheese, and a dollop of sour cream and guacamole.
- Roll and Serve:
- Fold in the sides of the tortilla, then roll it up tightly from the bottom.
- Serve immediately, or toast the burritos in a hot skillet for 1-2 minutes on each side for a crispy finish.
Tips:
- Customize the Filling: Add sautéed peppers, corn, or jalapeños for extra flavor and texture.
- Meal Prep: Wrap the assembled burritos tightly in foil and freeze for up to 2 months. Reheat in the oven or microwave.
- Make It Spicy: Drizzle hot sauce or add sliced pickled jalapeños for some heat.
Enjoy your cheesy, beefy burrito delight that’s perfect for a quick weeknight dinner or a satisfying lunch!
