Ingredients

  • 2 cups cooked chicken, shredded or cubed (rotisserie chicken works great!)
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 cup milk
  • 1 can (10.5 oz) cream of chicken soup (or homemade equivalent)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, or broccoli)
  • 2 cups shredded cheddar cheese (divided)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional)
  • 1 tablespoon olive oil or butter

Instructions

  1. Preheat and Prep:
    • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the Aromatics:
    • Heat olive oil or butter in a skillet over medium heat. Add the diced onion and sauté until softened, about 2-3 minutes. Add the garlic and cook for 30 seconds until fragrant.
  3. Assemble the Casserole:
    • In the prepared baking dish, combine the uncooked rice, chicken broth, milk, cream of chicken soup, sautéed onions and garlic, frozen vegetables, 1 cup of shredded cheese, salt, pepper, and smoked paprika (if using). Stir well to distribute ingredients evenly.
    • Gently fold in the cooked chicken.
  4. Bake:
    • Cover the dish tightly with aluminum foil and bake for 35-40 minutes, or until the rice is fully cooked and tender.
  5. Add the Cheese Topping:
    • Remove the foil and sprinkle the remaining 1 cup of shredded cheese over the top. Return to the oven and bake uncovered for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley if desired.

Tips:

  • Make It Creamier: Add ¼ cup sour cream or cream cheese to the mixture for extra creaminess.
  • Switch the Cheese: Swap cheddar for Monterey Jack, Colby, or a Mexican cheese blend for a different flavor.
  • Meal Prep Friendly: This casserole reheats beautifully, making it perfect for leftovers.

Serve this comforting casserole with a crisp green salad or garlic bread for a satisfying meal!
