Roast Beef Reuben Recipe

Roast Beef Reuben Recipe

A delicious twist on the classic Reuben, this Roast Beef Reuben features tender, thinly sliced roast beef in place of corned beef, with all the classic fixings: tangy sauerkraut, melted Swiss cheese, and creamy Russian or Thousand Island dressing, all served on toasted rye bread.

Ingredients

  • 8 oz roast beef (thinly sliced, about 1/4 lb per sandwich)
  • 4 slices rye bread
  • 4 slices Swiss cheese
  • 1 cup sauerkraut, drained and squeezed dry
  • ¼ cup Russian dressing or Thousand Island dressing
  • 2 tablespoons butter, softened

Instructions

  1. Prepare the Ingredients:
    • Drain and squeeze out the excess liquid from the sauerkraut.
    • Spread a thin layer of Russian or Thousand Island dressing on one side of each slice of rye bread.
  2. Assemble the Sandwiches:
    • On two slices of rye bread, layer the roast beef, followed by the Swiss cheese and sauerkraut.
    • Top each with the remaining slices of rye bread, dressing side down.
  3. Grill the Sandwiches:
    • Heat a large skillet or griddle over medium heat.
    • Spread butter on the outside of each sandwich.
    • Place the sandwiches in the skillet and cook for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese has melted.
  4. Serve:
    • Remove the sandwiches from the skillet and cut in half. Serve immediately with pickles or chips on the side.

Tips:

  • For Extra Flavor: Add a few slices of dill pickles inside the sandwich for a nice crunch and extra tang.
  • Make it Healthier: Swap out regular rye bread for whole grain rye or a lower-calorie version.
  • Spicy Kick: Add a little bit of horseradish sauce or mustard to the dressing if you prefer a spicy variation.

This Roast Beef Reuben is a hearty, flavorful sandwich that’s perfect for lunch, dinner, or a satisfying snack!
