Chicken Patties

Ingredients (Makes 6-8 patties)

  • 2 cups cooked chicken, shredded or finely chopped (leftovers work great!)
  • 1/2 cup breadcrumbs (plus extra for coating)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 1 large egg
  • 2 tbsp fresh parsley, chopped (or 1 tsp dried parsley)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 2-3 tbsp olive oil or vegetable oil (for frying)

Instructions

  1. Prepare the mixture:
    • In a large bowl, combine the cooked chicken, breadcrumbs, Parmesan cheese, mayonnaise, egg, parsley, garlic powder, onion powder, paprika, salt, and pepper. Mix well until everything is evenly incorporated.
  2. Form the patties:
    • Scoop out about 1/4 cup of the mixture and shape it into a patty (about 1/2 inch thick). Repeat with the remaining mixture.
    • For extra crispiness, lightly coat each patty with additional breadcrumbs.
  3. Cook the patties:
    • Heat the olive oil in a large skillet over medium heat.
    • Cook the patties for 3-4 minutes per side, or until golden brown and heated through.
  4. Serve:
    • Remove the patties from the skillet and let them drain on a paper towel-lined plate.
    • Serve warm with your favorite dipping sauce, in a sandwich, or as a protein-packed snack.

Optional Variations:

  • Spicy Kick: Add 1/4 tsp cayenne pepper or a dash of hot sauce to the mixture.
  • Cheesy Upgrade: Add shredded mozzarella or cheddar to the mix for gooey, cheesy patties.
  • Baked Option: Place the patties on a parchment-lined baking sheet and bake at 400°F (200°C) for 15-20 minutes, flipping halfway through.

These Chicken Patties are versatile and can be paired with a salad, stuffed in a burger bun, or served as an appetizer. Enjoy!
