Ingredients

For the Steak Marinade:

  • 1 lb (450g) flank steak or skirt steak
  • 1/4 cup olive oil
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste

For the Fajitas:

  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 1 tbsp olive oil
  • 8 small flour or corn tortillas

Optional Toppings:

  • Sour cream
  • Guacamole
  • Shredded cheese
  • Salsa
  • Lime wedges
  • Fresh cilantro

Instructions

1. Marinate the Steak:

  • In a bowl, combine olive oil, lime juice, soy sauce, Worcestershire sauce, garlic, cumin, chili powder, paprika, onion powder, salt, and black pepper.
  • Place the steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 30 minutes to 1 hour (or up to overnight for maximum flavor).

2. Cook the Steak:

  • Preheat a grill or skillet over medium-high heat.
  • Remove the steak from the marinade and cook for 4-5 minutes per side for medium-rare, or longer if you prefer your steak more done.
  • Let the steak rest for 5 minutes before slicing it thinly against the grain.

3. Cook the Vegetables:

  • While the steak is resting, heat olive oil in a large skillet over medium heat.
  • Add the sliced bell peppers and onion. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened and lightly charred.

4. Assemble the Fajitas:

  • Warm the tortillas in a dry skillet or microwave.
  • Slice the steak into thin strips and divide it among the tortillas.
  • Top with the sautéed peppers and onions.

5. Serve:

  • Serve the steak fajitas with optional toppings like sour cream, guacamole, salsa, shredded cheese, lime wedges, and fresh cilantro.

Serving Suggestions

  • Serve with a side of Mexican rice, black beans, or tortilla chips.
  • You can also offer a selection of hot sauces for added heat.
