Homemade Cajun Seasoning (optional):
- 1 tbsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1/2 tsp cayenne pepper
- 1/2 tsp oregano
- Salt and black pepper, to taste
Instructions
1. Prepare the Cajun Chicken:
- In a small bowl, combine the Cajun seasoning, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper.
- Rub the spice mixture evenly over both sides of the chicken breasts.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken breasts and cook for 5-7 minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).
- Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing. Optionally, squeeze fresh lime juice over the chicken for added flavor.
2. Cook the Coriander and Lime Rice:
- In a medium saucepan, bring 2 cups of water or chicken broth to a boil.
- Add the rice and a pinch of salt. Reduce the heat to low, cover, and cook according to package instructions (about 15-18 minutes for white rice).
- Once the rice is cooked, fluff it with a fork. Stir in the chopped coriander, lime juice, and lime zest. Season with salt and pepper to taste.
3. Assemble the Dish:
- Serve the coriander and lime rice as the base of the dish.
- Top with the sliced Cajun chicken.
- Optionally, garnish with extra cilantro, lime wedges, and a drizzle of olive oil or hot sauce for an extra kick.
Serving Suggestions
- Serve with a side of sautéed vegetables or a fresh salad.
- For extra flavor, add a dollop of sour cream or avocado slices on top of the rice.
