Ingredients

For the Tacos:
- 8 small corn tortillas
- Shredded lettuce

- Fresh cilantro leaves, for garnish
- Lime wedges, for serving
Instructions
- Prepare the Cauliflower:
- Preheat your oven to 400°F (200°C).
- Toss the cauliflower florets with olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
- Spread the cauliflower in a single layer on a baking sheet lined with parchment paper.
- Roast for 20-25 minutes, flipping halfway through, until the cauliflower is golden brown and crispy on the edges.
