  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika

For the Cilantro Lime Crema:

For the Tacos:

  • 8 small corn tortillas
  • Shredded lettuce
  • Diced tomatoes
  • Sliced avocado
  • Sliced red onion
  • Fresh cilantro leaves, for garnish
  • Lime wedges, for serving

Instructions

  1. Prepare the Cauliflower:
    • Preheat your oven to 400°F (200°C).
    • Toss the cauliflower florets with olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
    • Spread the cauliflower in a single layer on a baking sheet lined with parchment paper.
    • Roast for 20-25 minutes, flipping halfway through, until the cauliflower is golden brown and crispy on the edges.
  2. Make the Cilantro Lime Crema:
    • In a small bowl, mix together sour cream (or Greek yogurt), mayonnaise, cilantro, lime juice, lime zest, garlic powder, salt, and pepper. Stir until smooth and well combined.
  3. Warm the Tortillas:
    • Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds per side until warm and pliable. Alternatively, wrap them in a damp paper towel and microwave for 20-30 seconds.
  4. Assemble the Tacos:
    • Place a few roasted cauliflower florets in the center of each tortilla.
    • Top with shredded lettuce, diced tomatoes, sliced avocado, and red onion.
    • Drizzle with cilantro lime crema and garnish with fresh cilantro leaves.
  5. Serve:
    • Serve the tacos immediately with lime wedges on the side.

Tips

  • For a smoky flavor, try adding a chipotle pepper or some smoked chili powder to the crema or cauliflower seasoning.
  • To make the tacos spicier, add a few dashes of hot sauce or jalapeño slices on top.
  • You can also serve these tacos with a side of Mexican rice or black beans for a complete meal.
