Green Detox Soup (Healthy & Nourishing) Recipe

This vibrant and nutrient-packed green detox soup is full of fresh vegetables, making it a great way to nourish your body and support your immune system. It’s light yet satisfying, perfect for a detox day or a healthy meal anytime!


Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 large zucchini, chopped
  • 1 cup spinach
  • 1 cup kale, chopped (stems removed)
  • 1 cup broccoli florets
  • 1/2 cup green peas
  • 1 medium potato, peeled and chopped
  • 4 cups vegetable broth (or chicken broth for extra flavor)
  • 1 tbsp lemon juice
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/4 tsp ground ginger
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, for garnish

Instructions

  1. Sauté the Vegetables:
    • In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 3-4 minutes until softened and fragrant.
    • Add the celery, zucchini, and potato, and cook for another 5 minutes, stirring occasionally.
  2. Add the Broth and Seasonings:
    • Pour in the vegetable broth, turmeric, cumin, and ground ginger. Stir to combine.
    • Bring the soup to a boil, then reduce the heat to a simmer. Let it cook for 10-15 minutes, or until the potatoes are tender.
  3. Add the Greens and Peas:
    • Add the spinach, kale, broccoli, and green peas to the pot. Simmer for an additional 5-7 minutes until the greens are wilted and the broccoli is tender.
  4. Blend the Soup:
    • Use an immersion blender directly in the pot to blend the soup until smooth and creamy. Alternatively, transfer the soup in batches to a regular blender and blend until smooth.
  5. Finish the Soup:
    • Stir in the lemon juice, and season with salt and pepper to taste.
    • If the soup is too thick, add a little extra broth or water to reach your desired consistency.
  6. Serve:
    • Ladle the soup into bowls and garnish with fresh parsley or cilantro.

  • For extra creaminess, blend in a 1/2 cup of coconut milk or a small avocado.
