Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 celery stalks, chopped
- 1 large zucchini, chopped
- 1 cup spinach
- 1 cup kale, chopped (stems removed)
- 1 cup broccoli florets
- 1/2 cup green peas
- 1 medium potato, peeled and chopped
- 4 cups vegetable broth (or chicken broth for extra flavor)
- 1 tbsp lemon juice
- 1/2 tsp ground turmeric
- 1/2 tsp ground cumin
- 1/4 tsp ground ginger
- Salt and pepper, to taste
- Fresh parsley or cilantro, for garnish
Instructions
- Sauté the Vegetables:
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 3-4 minutes until softened and fragrant.
- Add the celery, zucchini, and potato, and cook for another 5 minutes, stirring occasionally.
- Add the Broth and Seasonings:
- Pour in the vegetable broth, turmeric, cumin, and ground ginger. Stir to combine.
- Bring the soup to a boil, then reduce the heat to a simmer. Let it cook for 10-15 minutes, or until the potatoes are tender.
- Add the Greens and Peas:
- Add the spinach, kale, broccoli, and green peas to the pot. Simmer for an additional 5-7 minutes until the greens are wilted and the broccoli is tender.

- Use an immersion blender directly in the pot to blend the soup until smooth and creamy. Alternatively, transfer the soup in batches to a regular blender and blend until smooth.

- Stir in the lemon juice, and season with salt and pepper to taste.
- If the soup is too thick, add a little extra broth or water to reach your desired consistency.
