Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 2 medium sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp ground cinnamon (optional, for extra warmth)
- Salt and pepper, to taste
- 1 red bell pepper, diced
- 1 cup broccoli florets
- 1 tbsp fresh parsley, chopped (for garnish)
- Lemon wedges, for serving
Instructions
- Preheat the Skillet:
- Heat a large, oven-safe skillet over medium heat. Add 1 tbsp olive oil and let it heat up.
- Prepare the Chicken:
- Season the chicken breasts with salt, pepper, garlic powder, paprika, and cumin.
- Place the chicken in the skillet and sear for 3-4 minutes per side, until golden brown.
- Remove the chicken from the skillet and set aside.
- Cook the Sweet Potatoes:
- In the same skillet, add the diced sweet potatoes. Season with salt, pepper, and cinnamon (if using). Stir well to coat.
- Cover the skillet and cook for about 10-12 minutes, stirring occasionally, until the sweet potatoes start to soften.
- Add the Vegetables:
- Add the diced bell pepper and broccoli florets to the skillet with the sweet potatoes. Stir everything together.
- Nestle the chicken breasts back into the skillet, on top of the veggies and sweet potatoes.
- Finish Cooking:
- Cover the skillet with a lid and reduce the heat to low. Cook for an additional 10-15 minutes, until the chicken is cooked through and the sweet potatoes are tender.
- If you’d like a crispy top on the chicken, place the skillet under a broiler for 2-3 minutes to finish.
- Serve:
- Garnish with fresh parsley and serve with lemon wedges for a bright finish.

- To add extra flavor, drizzle the chicken with a little balsamic glaze or sprinkle with feta cheese before serving.
- You can swap out the broccoli for spinach, kale, or another favorite green veggie.
